This is a basic recipe that you can add any of your favorite flavors or fruit to. It uses whole goat's milk, so there is no need to separate the cream from the milk. You can substitute honey or other sweetener for the sugar.
Ingredients:
6 cups whole goat's milk
2 beaten egg yolks
1 cup sugar
1/4 tsp salt
4 Tbs vanilla (make your own flavors by adding different flavorings, fruit, nuts, melted chocolate, etc.)
Add ingredients to sauce pan and heat to just before boil (scalding), stirring often on medium heat.
If you want to make chocolate, add two squares of unsweetened chocolate and an additional 1/4 to 1/2 c of sugar. You can use an equivalant amount of cocoa powder.
If you use already sweetened milk or dark chocolate, do not add the extra sugar.
Add your fruit AFTER you have cooled the mixture down.
We added about 1 cup of crushed strawberries. You can add more or less depending on your personal preference.
Remove from heat and cool in refrigerator or ice bath. When mixture is cool, freeze according to your ice cream maker instructions.
We have added chocolate, nuts, fruit, and other flavorings for a variety of ice cream flavors.
